RECIPE: Sweet Potato, Curly Kale & Ginger Soup

I’ve just finished concocting the second recipe for my friend Ben and his wonderful Thinking Country seasonal recipe series. The New Year has finally arrived, which means we’re only a few weeks away from spring! I’m trying not to wish those weeks away - after all, midwinter is a time to restore our minds and bodies, to make plans and gear up for the next twelve months. For the next few weeks I’ll be taking care of myself and preparing for a busy year. Nature always offers the best nourishment, so this recipe is bursting with vitamins and minerals from seasonal sweet potato, kale and ginger - the perfect combination for cosy winter nights.
